Objective
The aim of this project is to study the biogenic amines production in fish stored at 0 and 10°C under modified atmospheres and its relation with spoilage flora and quantity and quality of enterobacterias growing in fish muscle. Subsequently, will be take place the study ""in vitro"" of those producing biogenic amines microbial species in order to establish their growth and metabolitic activities under the mentioned storage conditions. (gas and temperature conditions).
The fish specie selected has been sardine because of its implication in toxicological diseases for Histamine. The temperature assayed will be O°C (as proper storage temperature of fish') and 10°C (abuse temperature which fish may be reached during the commercialisation in Mediterranean countries).
The gases mixtures assayed will he C02 (80-40%) and 02 (60-20%), because previous studies have shown that these mixtures exercise an inhibitory effect km biogenic amines production, spoilage and pathogenic flora of fish.
