Factors affecting nutrient release from plant-based foods

Objective

Biophysical methods and well-defined plant systems will be used to investigate cellular, molecular and processing factors that determine the release of nutrient molecules from plant-based foods. Training will focus on the application of modern plant sciences in a commercial research environment .
