A seminar on the industrial biological preservation of foods, organized by the Nordic Minimal Processing Network with support from the European Commission, DG XII, will take place in Aarhus, Denmark on 10 and 11 June 1998.

The objective of the seminar is to enhance the industrial development and utilization of biological preservation of food products through various presentations by European scientists and companies on theory, applications and legal aspects. The main emphasis of the seminar will be on bacteriocins and other antimicrobials.

The topics to be covered include:

- Bacteriocins from lactic acid bacteria;
- Bacteriocin production;
- Mode of action;
- Biopreservation of fish, meat, dairy, poultry and cereals;
- Biopreservatives and green chemicals;
- Legal aspects.
