Objective
The general objectives of the proposed work are :
- to develop a mechanistic understanding of the phase separation phenomena of
mixtures of food biopolymers;
- and to provide a scientific basis for the choice of through-put and temperature
profiles for food manufacture in which the structure is made up of gelling
biopolymers.
The proposed research belongs to area 3.4 (generic science) in which we provide knowledge applicable to 3.4.2 (biophysics and bioengineering).
More specifically, it is the intention of this project to provide an understanding of the initial mechanism of phase separation in mixed biopolymer solutions, and how the kinetics of such a mechanism compete with ordering processes of the constituent biopolymers, when the system is allowed to develop structure (i.e. cooling a hot liquid mixture, addition of ions, changing Ph).
Such an understanding will be used to develop a predictive model which will allow control of food microstructure formation.
