Elisa tests for proteases and proteases inhibitors quantification in muscle and meat: developement of a kit for cathepsins b and l quantification and its transfert to meat industry.

Objective

To complete the collection of ELISA tests already available for quantification of calpains, proteasome and their inhibitors, we planned to develop a similar test for cathepsin B and L quantification, the major proteases of the third intracellular proteolytic system, i. e. the lysosomal system.
