Objective
To minimize the risk of incidents with food products, it is proposed to set up a network to disseminate knowledge needed to design hygienic buildings and equipment. The network involves experts from many EU countries, of all disciplines involved. Subjects covered include hygienic design criteria, design of buildings and open/ closed food plants, equipment design (homogenisers, pumps, cooling/chilling equipment, and design of components (couplings, valves, sensors). Design and operation of process lines (e.g. pasteurisation) is addressed, as well as selection of materials for food contact applications. Guidelines with clear and concise recommendations ace produced. Another aspect is the verification. whether hygienic requirements are met. Uniform test methods are recommended. Ample attention is given to training and education of employees in the food chain and those involved in design.
