Pulses & health-state of the art and communication

Objective

There are apparently many evidences that pulses could be highly beneficial for health of European consumers. Indeed they provide the consumer with high protein (from plant origin), low fat, high starch (slow carbohydrate type) and high fibre food. In order to increase pulse consumption in Europe and improve health, it is important to check the evidences of these potential health benefits to properly publicize them with sound arguments. Therefore, first, a workshop (about 20 persons) will enable nutritionist's experts to discuss scientific knowledge on the basis of their own experience but also on a critical and exhaustive analysis of the literature. A review will be written by each of the speakers and will be published as a book. Second, a conference will be organised to communicate towards consumers, health professional players, food industrialists, producers and journalists. A leaflet summarising the main outputs of the meetings will then be available for a wide dissemination.
