Objective
Traditional fresh fish storage on board and during retailing still presents technical limitations leading to the rejection of important amounts of fish and/onto the supplying of foods with inferior quality. Marine and farmed species would benefit from the application of modified atmosphere storage providing they meet microbiological safety and hygiene requirements and extend shelf life of fish products. The project aim is the development of studies specially concept for particular species and using conditions that allow the industrial application of modified atmosphere packaging. The research will consider the application of modified atmospheres in bulk, on board and/or trailers and in individual packs, and the preparation of documentation related to the HACCP plans, safety regulation and consumer's information. This project will enhance the technological capacity of the involved industries and improve better handling/preservation practices onboard and over the distribution chain.
