Objective
The objective of the proposed research project to develop a new and innovative heat chamber for keeping ready baked goods even more fresh and for storing them under particular consideration of energetic and technical aspects. Basic theoretical studies have shown that the storage of baked goods under defined environmental conditions such as controlled atmosphere, temperature etc. is technically realisable. The HEBAGO system to be developed is mainly characterised by a new and innovative heat chamber integrated into an existing baking process. It is installed directly after the oven and thanks to heat recovery by employing the warm exhaust air from the oven, no extra heating energy is needed. After baking, the bread is immediately transported into the heat chamber and stored under a controlled atmosphere depending on the product. The advantages of the proposed HEBAGO system are: Storage under controlled atmosphere; Increased flexibility and availability of a broad range of fresh products and the levelling out of production peaks; Effective improvement of the degree of freshness due to no starch retro gradation; thus stopping or slowing down of the ageing process is possible; 24-hour availability of fresh baked goods in answer to extended store open
