Objective
To meet the health standards of Directive 92/46/EC, milk is usually subjected to heat treatments. Even if the duration of these treatments is very short, the organoleptic characteristics of the raw milk are lost or substantially modified. Several studies have demonstrated that an ultrasonic (US) treatment of milk can significantly improve its quality in terms of healthiness and homogenisation. The present project is aimed to develop an US treatment technique, alternative or complementary to conventional heat treatments, able to decrease treatment costs and, at the same time, increase milk healthiness and homogenisation. It will also be studied the coupling of the US treatment with a mild heat treatment, in case the US treatment alone would not be sufficient to meet the health requirements. The work will be mainly focused on the development of a demonstrative prototype, that can be easily inserted in treatment plants to replace or support milk pasteurisation.
