International symposium on functional foods: scientific and global perspectives

Objective

The concepts of food have expanded from an emphasis on survival to a growing interest in foods and bioactive food components that promote health and well being, and reduce the risk of disease. The International Symposium on Functional Foods: Scientific and Global Perspectives will be held in October 2001, to acknowledge the importance of this new field, and improve our understanding of the role food holds in enhancing health and well being. In four sessions, four panel debates and five poster sessions, the scientific basis, global views and concepts, health benefits, safety aspects, human variability factors, communication enhancement and future development of functional foods will be reviewed. The proceedings and panel discussion summaries will be published in a scientific journal.
