Decontamination of prepared fruits and vegetables using minimal processes for destroying bacteria, viruses and protozoa

Objective

The consumption of raw, ready-to-eat prepared vegetable and fruit products is rapidly increasing. Outbreaks of food-borne infection due to consumption of contaminated vegetables have serious economic consequences and the FDA warns the consumers not to eat raw sprouted seeds. Currently used decontamination steps areunable to kill micro organisms on the tissue surfaces and alternatives are urgentlyneeded.The objective is to develop the most safe and sustainable minimal process using Alight separately or combined with rapid steam injection or ultrasound, and to test the benefit of ozone. The approach to meet this objective is to develop and optimise these advanced technologies in order to efficiently inactivate bacteria, viruses and protozoa on the surfaces of vegetables and fruit tissues and improve and optimise the sensory and nutritional quality. The project will seek to identify a sterilisation process, which is acceptable, through use of physical rather than chemical treatment.
