Objective
The European Union occupies first place in worldwide vine growing and processing. With 20% pomade in harvested grape, approximately 4 million tons of solid residues are produced annually in Europe. This organic solid waste contains valuable organic substances such as libbers, tannins, polyphones, proteins and lipids. Particularly the polyphone fraction, to which the health benefits of red wine consumption have been attributed, has outstanding importance for its anti-oxidant properties and influences lipid metabolism, leading to a reduction of serum lipids and cholesterol. The common waste disposal strategy for grape pomade is depositing in vineyards as fertiliser. However, the tremendous potential of the remaining high-value and biologically active substances is generally unused. Within the framework of this CRAFT project, the proposes will investigate the possibility of extraction and purification of biologically active organic components to be used as high value functional food additives for human nutrition. Furthermore, biotechnological processes such as the use of enzymes for the liberation and increasing accessibility of valuable substances will be studied.
