Production of omega-3 fatty acids and applications in the food industry

Objective

Currently, fish scraps are mostly used as a low-value animal feed or considered as a waste product. Fish oil from oily types of fish has a high content in omega-3 fatty acids, which are essential to human health and can be used as a new functional food ingredient. Unfortunately, the actual process to produce fish oils impairs the omega-3 fatty acids because of their thermal instability. But a regular intake of omega-3 fatty acids decreases significantly the risk of so-called lifestyle diseases. The development process will enable small and medium sized fish processors to use their so far unused parts to produce high quality fish oil with a high omega-3 content without any heating or solvent extraction. The oil will be stabilised by micro-encapsulation and directly used by the food industry in common foods like bread or snacks. Despite of this a new method of micro-encapsulation will be developed to produce a freezing and heating stable capsule for frozen stored foods like ready-made meals. This would enable the food industry to use omega-3 rich fish oil in a wide field of applications.
