Objective
All partners involved in the Project FAIR-CT97-3078 "Enterococci in Food Fermentations. Functionalism Safety Aspects", in collaboration with the Federal Institute for Health Protection of Consumers and Veterinary Medicine (Bevy, Germany), will organise an International Symposium on "Enterococci infolds. Functional and Safety Aspects". This conference aims to present the positive items of enterococci as food fomenters and robotics, and confront them with disadvantages such as potentialvirulence factors, antibiotic resistance development and spreading. The Symposium will focus on topics such as :-Ecology, Taxonomy and Physiology of Enterococci-Functionality of Enterococci in Foods-Functionality of Enterococci in the GI Tract-Safety Aspects of Enterococci
