Combined database on microbial responses to the food environment

Objective

This proposal is about the European extension of a database on microbial responses to food environments ( Combos), currently run buy a UK and a US research institute. An Internet-based, international database is proposed, for a repository for food microbiology data serving quantitative microbial risk assessment purposes. The database would pool publicly available data that fits into the "Food environment => Microbial response " scheme. The compatible database protocol proposed here would help to standardise microbial data collection thus allowing direct comparison of the emerging data with that available globally. The large amount of microbial data of the final product (e-Combos) will be accessible fast and in user-friendly format via the Internet and would provide a reference database for food scientists and different international risk assessors.
