Mam synthases and the production of cancer-protecting glucosinolates in vegetables.

Objective

The cancer-protective quality of cruciferous vegetables is linked to the presence of glucosinolates. Understanding the biosynthesis of these compounds should result in the design of functional foods enriched in advantageous glucosinolates.
