Objective
A project is proposed to isolate, purify and characterise two types of plant enzymes viz. lipoxygenase and ascorbate-oxidase. These enzymes are involved in electron-transfer reactions of unsatured fatty acids and ascorbate, respectively. These enzymes will be isolated from soybeans, potatoes, wheat and green zucchini. Better purification methods will be searched for together with attempts to obtain them by genetic engineering. Their chemical, spectroscopic and catalytic properties will be studied. Technological applications of these enzymes will be attempted.
