Lactic acid bacteria: From fundamental research to innovative applications

A conference on "Lactic acid bacteria: From fundamental research to innovative applications" will take place in Cork, Ireland, on 22-26 October 1995. It is organized by University College Cork and BioResearch Ireland, with sponsorship from the Commission's Biotechnologies and Agriculture and Fisheries programmes of the Fourth Framework Programme for RTD activities (1994-1998).

The aims of the conference are to:

- Review the progress achieved to date on the genetics, physiology, biochemistry and applications of lactic acid bacteria (LAB);
- Assess how the knowledge and technological innovations derived from more than a decade of EC-sponsored research can best be exploited for the benefit of European industry.

Specific attention will be given to reviewing:

- The advances of the molecular biology of LAB, including an assessment of industry and consumer acceptance of genetically modified LAB;
- Key technological traits and potential applications in traditional and novel food systems;
- Aspects of LAB relevant to human health.
