Lactic acid bacteria: From fundamental research to innovative applications
The aims of the conference are to:
- Review the progress achieved to date on the genetics, physiology, biochemistry and applications of lactic acid bacteria (LAB);
- Assess how the knowledge and technological innovations derived from more than a decade of EC-sponsored research can best be exploited for the benefit of European industry.
Specific attention will be given to reviewing:
- The advances of the molecular biology of LAB, including an assessment of industry and consumer acceptance of genetically modified LAB;
- Key technological traits and potential applications in traditional and novel food systems;
- Aspects of LAB relevant to human health.
