The project aimed to explore sustainable protein extraction from cereal processing by-products and wastewater, addressing the growing issues of food waste and losses in global supply chains. The primary objective was to investigate the feasibility of using biorefineries to valorize cereal by-products such as rice, wheat, corn, millet, and oat, along with wastewater, to extract valuable proteins. By analyzing the amino acid content, molecular weight distribution, and bioactive properties of these proteins, the project sought to propose sustainable alternatives to conventional protein sources, contributing to food security and reducing waste.
The project successfully conducted a comprehensive literature review, identifying key methodologies and research gaps in sustainable protein extraction. It highlighted the potential of integrating biorefinery concepts into cereal processing for enhanced sustainability. The conclusions drawn emphasized the need for future research to focus on refining extraction procedures, addressing allergenicity, and incorporating these concepts into current supply chains for broader impact. While the experimental component was not realized, the project contributed valuable theoretical insights, laying a foundation for subsequent empirical studies in this field.
