WP3 – Work Progress
•Task 3.1. Development of new-predictive module (M1-M20).
•Models validated using experimental data from D3.2.
•Confirmed suitability for bioprocess prediction.
•Ongoing analysis of lipid and carbohydrate composition to improve GEM predictive capabilities.
•New microorganisms are being sequenced to expand the library of genome-scale metabolic models (GEMs).
•Task 3.2. Fermentation of plant-based substrates by microbial strains to produce ingredients (M4-M20).
•Accurate reproduction of the bioprocesses described in D3.2.
•Robust performance across different feedstock compositions and pre-treatments.
•Supports optimization of upstream pre-treatments to maximize productivity.
•Future integration of cost estimation to balance process yield and economic feasibility.
•Task 3.3. Tailoring yeast biomass (M4-M20). More experiment data are being calculated to obtain the desired accuracy to perform task 3.3 which will start as soon as those tests are finished.
WP4 – Ingredient 1: Functional Ingredient
•Task 4.1. Pre-treatment of agrifood by-products (M1-M2)
•Task 4.2. Selection of microorganisms for fermentation (M3)
•Task 4.3. Selection and optimization of submerged liquid fermentation (SLF) (M4-M7)
•Task 4.4. Downstream processes to obtain functional ingredient (M6-M8)

WP4 Summary of Accomplishments
•Timeline and Milestones: All deadlines established for WP4 were strictly met, including the execution of scheduled tasks, the achievement of project milestones, and the timely submission of the required deliverable.
•Task Completion and Reporting: This specific work package was successfully completed in Month 9 of the project (February 28, 2026), and all corresponding results have been comprehensively presented in deliverable D4.2.
WP5 – Ingredient 2: alternative fats
•Task 5.1 Pre-treatment of agrifood by-products (M6-M7). The corresponding results and overall progress have been comprehensively presented in deliverable D5.3.
•Task 5.2 Selection of oleaginous yeasts (M7-M8). The corresponding results and overall progress have been comprehensively presented in deliverable D5.3.
•Task 5.3 Fermentation to produce lipids (M9-M12). The corresponding results and overall progress have been comprehensively presented in deliverable D5.3. In the following deliverable (D5.1; M15), the whole design and results of the scale-up presented in D5.3 will be presented, together with the results of tasks 5.4 and 5.5.
•Task 5.4 Downstream processes to obtain lipids (M12-M13). This task is currently ongoing, and different extraction methods are actively being tested. The final outcomes and progress will be formally presented in deliverable D5.1.
WP6 – Ingredient 3: vitamin B12
Strategic Shift: Vitamin B12 to GABA
•Strategic Pivot: Market analysis showed limited potential for Vitamin B12. It has been replaced with a higher-value ingredient aligned with current market needs.
•New Target (GABA): The focus is now on producing a microbial biomass enriched with GABA (γ-aminobutyric acid).
•What is GABA?: A natural amino acid and neurotransmitter recognized for reducing stress, promoting relaxation, and improving sleep quality.
•Work Plan Continuity: The core methodology and tasks within the WP remain unchanged; only the target output shifts from Vitamin B12 to GABA. Task 6.1 is currently ongoing and progressing according to schedule.
