Objective
CRAFTSENSE aims to develop a next-generation analytical framework for real-time monitoring and predictive control of fermentation processes in wine and brewery environments. The project integrates optical microfluidic sensing, adaptive calibration intelligence, uncertainty-aware analytics, and AI-driven predictive modelling into a unified, interoperable system capable of operating under real industrial conditions. The consortium brings together leading academic institutions, research centres, technology SMEs, and industrial fermentation operators from Europe and Jordan, covering the full innovation chain—from sensing design and laboratory validation to digital integration, pilot deployment, and exploitation. Through a structured programme of intersectoral and international secondments, CRAFTSENSE enables the co-development and validation of advanced analytical solutions across laboratories, AI environments, and real production settings. The project will deliver a portable micro-diagnostic platform for total and volatile acidity monitoring, adaptive calibration models resilient to environmental variability, and predictive tools capable of identifying fermentation deviations at early stages. These outputs will be integrated into digital workflows through interoperable architectures, supporting scalable deployment across SME fermentation environments. By combining scientific excellence with operational validation, CRAFTSENSE advances decentralized, data-driven quality control in fermentation industries. The project contributes to improved process efficiency, reduced waste, and enhanced product consistency, while strengthening European innovation capacity in digital agrifood systems and supporting the transition toward more sustainable and intelligent food production.
