Controlling oxidative deterioration during manufacturing and storage of healthy seafood products prepared from an under-utilised fatty fish species

Objectif

Fatty fish are rich in long chain polyunsaturated omega-3 fatty acids, which are known for their health effects and excellent nutritional value. However, in spite of their availability, low price and good nutritional value, some fatty fish species are under-exploited. The idea of the project is to exploit the nutritional properties of these species by producing healthy fish minces.

However, fatty fish are difficult to process due to their high content of polyunsaturated fatty acids, which are very sensitive to oxidation. Lipid oxidation occurs during processing and storage of fatty fish and result in formation of compounds affecting nutritional properties and sensory quality of fatty fish products. Oxidised lipids interact with proteins inducing modification of texture and colour. The aim of this project is to produce high quality fish minces, but to reach this objective it is indispensable to understand mechanisms of oxidative reactions in order to control them during processing and storage.

The second objective is therefore to gain a better understanding of oxidative deterioration processes and especially to unravel mechanisms involved in interactions between products of lipid and protein oxidation. The understanding of these reactions will help us to develop efficient antioxidant strategies to protect both lipids and proteins against oxidation. Horse mackerel mince with different lipid contents will be used in the project. After evaluating the oxidative stability during manufacturing and storage of fish mince, the study will focus on determination of lipid and protein oxidation in model systems by modulating different oxidative levels of proteins and/or lipid.

The last stage of the project will focus on optimisation of production of fish mince of high nutritional value by testing selected antioxidants. It is expected that the project will result in guidelines for preventing lipid and protein oxidation during processing and storage of healthy fish products.
