IMPROVEMENT OF THE SAFETY AND QUALITY OF REFRIGERATED READY-TO-EAT FOODS USING NOVEL MILD PRESERVATION TECHNIQUES

Objective



The project is aimed at the improvement of safety and quality of vegetable foods with mild preservation techniques combined with refrigeration. Novel techniques are described for modified atmosphere packaging and coating, including biodegradable new coating materials. These materials will be used in combination with modified atmospheres and/or anti-microbial substances, added to coatings or produced by natural epiphytes or lactic bacteria. The results of these techniques on the growth of pathogenic psychrotrophs like Listeria monocytogenes and non-proteolytic Clostridium botulinum will be studied.
