RATIONALIZATION AND HARMONIZATION OF THE EUROPEAN PIG MARKET WITH RESPECT TO THE PRODUCTION OF ENTIRE MALES THROUGH AN IMPROVED KNOWLEDGE OF COMPOUNDS RESPONSIBLE FOR BOAR ODOUR

Objectif



The objective of this project is to provide scientific evidence for an objective measurement of boar taint in entire male pigs.
An specific objectives is to improve the knowledge on the respective contributions of androstenone and skatole to boar taint and their possible variations according to production systems and consumer populations. This is achieved through:
- a survey of the present situation regarding androstenone and skatole levels in entire male pig populations in six countries (DK, ES, FR, GB, NL and SE),
- a comparison between 7 countries (DE, DK, ES, FR, GB, NL and SE) of trained sensory panel responses and consumer reactions to entire male pig meat with known differences in androstenone and skatole levels,
- the search for possible other malodorous compounds contributing to boar taint.
The results will be the definition of scientifically based uniform quality norms for the measurement of boar taint usable throughout the EC. This will be essential for the definition of methods for the assessment of boar taint on the slaughter line.
