ENERGY SAVING BY ASEPTIC PACKAGING OF PREPARED MEALS IN EASY-OPENING CARTONS FOR LONG SHELF-LIFE AT AMBIENT TEMPERATURE

Objective

Aim is to demonstrate the comparative energy efficiency of high-temperature short-time sterilization of foods containing large pieces up to 25 mm in size preserved by aseptic packaging.
The project combines several food processing and packaging techniques. Sterilization is achieved through direct electrical heating. The foods are packaged in aseptic easy-opening paperboard cartons. The process and packaging system will be installed in a major food processing plant. The process is more energy efficient than conventional canning or refrigerated preservation methods. The forecast energy saving is 2 720 TOE/year. The direct electrical sterilization and preservation of foods containing 25 mm particles in easy-opening aseptic packages is innovatory.
Production runs of ravioli in tomato sauce and minestrone formed the basis for the results. Data obtained via meters was recorded and extrapolated to indicate energy consumption typical from such technology in continuous operation - these analyses show that use of the technology offers 96.5% of the energy saving described in the contract, or 2648 TOE per annum per installation (2076 TOE p.a. inc. energy conversion factor).
Project involves establishing a batch production line in the factory of a food processor. Line consists of an APV "Ohmic" batch food sterilizing system coupled to an Odin carton forming, sterilizing, filling and closing machine. The "Ohmic" system is designed to sterilize low-acid foods containing high concentration of solid particles of up to 25 mm in size. It permits optimization of sterilization of both particulate and sauce phases with consequent benefits to overall product quality.
The Odin carton system incorporates a large-aperture, heat-sealed, easy-opening feature to enhance usage. The carton filling and sealing machine incorporates a filling unit specially designed for products containing high concentrations of large particles to which damage is minimized, and for blending those at the point of fill with separate supply of liquid diluent as required.
The line will be used to produce a range of food products for market trials. The energy consumption of the complete line will be monitored by measuring electrical power, compressed air and steam consumption. Operating speeds, efficiency, production and consumption of packaging materials will also be monitored.
