LINE CHILLING OF CARCASS BEEF.

Objective

THE OBJECTIVES ARE MATHEMATICAL MODELS, RESEARCH AND DESIGN OF A SYSTEM OF IN-LINE CONTINUOUS CHILLING OF CARCASS BEEF. WITH A VIEW TO:
- CONSERVING ELECTRICAL ENERGY BY FIRE CONTROL OF DIRECTION, SPEED AND TEMPERATURE OF AIR STEAM CHILLING.
- FACILITATING BODY HEAT ENERGY RECOVERY.
- REDUCING CARCASS WEIGHT LOSS.
- INCREASING MEAT QUALITY BY ENHANCING POST-MORTEM PROTOLYSIS.
- DESIGNING OF A NEW LINE CHILLER.
