Determination of the milk fat content of mixed spreadable fats (SPREADS)

Objective

This proposal is aimed at developing, validating, ring testing and documenting a reference method for the determination of the milk fat content in spreadable fats. The target will be achieved by a stepwise approach. Firstly, the fatty acid and triglyceride composition of authentic milk fats from the Member States will be characterized by GLC, HPLC, FT-NIR and NMR spectroscopy. Compositional data will be compiled, and this database will be made available to the Community in electronic format (CD ROM). In the next step, data of non-milk fats suitable for manufacturing mixed spreads and fat blends with an exactly known composition will be added to the database. The information content of this database will then be used to set up calibration models by multivariate statistical procedures. The most promising approach, i.e. the one with the least deviation from known values, will be ring-tested according to AOAC principles.
