Objective
Saffron is very appreciated by European Firms as color foodstuffs. However, its high price in the market incites the fraud by inclusion of another substances (cheaper) colored with some additive in many cases non-authorized by the European Union. Apart the serious health risk of such additives the fraud is causing an important socio-economic problem affecting to many European Enterprises. This is a common practice of both European and Asian (mainly Iranian) Firms where the National Normative are less restricted. Furthermore, the normative ISO 3632-1/2presents an important gap in the technical description of procedure to detect and identify color additives. The lack of standardized normatives allows the fraud. The price of some batches is reduced between 30-40% of the real costs. Indeed the fraud, the adulteration supposes an illegal competence against legal European Firms, which cannot afford such reduction of prices.
