Objective
Gari is a traditional fermented cassava-based staple food produced by natural solid-state fermentation (SSF) and it is the main energy source for many people in West Africa. However, cassava contains very low levels of protein. The objective of this project is to improve the nutritional quality of gari by fortification with soybeans and palm oil (in West Africa) and coconut milk (in East Africa), using a specially formulated starter culture. The technology developed will be disseminated through women' s production networks, which will be assisted with business development support. An increase in the consumption of gari and an improvement in the incomes of cassava growers and gari producers will result from the project.
