New clean and safe processes for the obtention of food and leather products

Objective

The main objective of the project is the improvement of industrial processes by using enzymatic technology at low temperatures (below 10°C).There are processes in industry that are best carried out at low temperatures due to technological reasons which affect directly the quality and safety of products and to avoid the spoilage of the organic material. Three OF these processes will be studied in this project, the pee-ling of squid for selling it crude and frozen, the ripening of cheeses and hide debarring for leather production. The advantages that portliness with high operational performance at low temperature can bring to the stated industrial processes are: Specificity, Security, Acceleration of processes therefore reduction of the costs of the process. Fewer chemicals used meaning a cleaner technology is used, better quality products obtained as secondary reactions are avoided. All this will mean a reduction of the cost of production, improvement of environmental problems and improvement of the quality of the goods obtained thus increasing the competitiveness of the European Industries
