Enzyme-based detection bio-sensor

Objective

EN.BIOS Exploratory Phase proposal objective is the development, testing and validation of an advanced biosensor device, using enzymes as detection element and an electrochemical system as transducer. EN.BIOS. will permit the detection in various matrices (fruit juice, dairy products, wine, etc.) of specific food components such as: sugars, alcohol, organic acids, stabiliser, antioxidant. The following activities will be carried out:
- development and testing in various matrices of a sensor laboratory prototype;- development of simple analytical procedures to measure compounds through the bio-sensor according to end-users specifications;
-validation of the implemented bio-sensor and the relative analytical procedures for the determination of specific compounds through consolidated traditional methods in artificial and real samples;
- testing of the validated bio-sensor by end-users operating in different sectors in the agro-industrial field (fruit juices, wine, dairy) for a feed-back process to optimise and diffuse the technology;
- economic and technical feasibility analysis to assess a large scale production potential.
