Advanced training courses on chemistry and biochemistry of antioxidants, their effects on health and disease, and risk evaluation of their use as functional food ingredients.

Objective

The proposal aims at organizing two additional versions of our advanced workshops directed at the education of European junior scientists in the field of chemistry and biochemistry of antioxidants, their effects on health and disease and risk evaluation of their use as functional food ingredients. Many of the benefits of antioxidants stated in health claims on food products and food supplements still require substantial validation, as well as evaluation of the benefit-risk balance taking into account possible toxicological risks. The workshops are a combination of theoretical and practical courses and the first two editions showed that they provide an excellent way to improve the human research potential in the rapidly developing field of antioxidant functional food ingredients and supplements .
