Objective
The first objective of the project is to build an ultra high-pressure homogenisation equipment (UHPH). Such equipment has to be able to process liquid food up to 350 Map in a continuous flow (30l/hour). The outlet temperature of the product after treatment has to be between 40 and 72°C, when working at maximum pressure. Maintenance time after pressurised will be also variable (1-15 seconds). It is expected that UHPH process will pasteurise food products working at low temperature outlet, and sterilise the food products if UHPH treatment at 72 °C misapplied, with a very minimal impact on organoleptic and nutritive characteristics. Extensive analysis on toxicological and microbiological aspects of processed foods will be carried out. Main products to be treated are: milk (low temperature UHPH, and UHPH at 72 °C), wine (low temperature UHPH) and honey (UHPH processing at 72 °C).
