Development of a new beverage with pseudocereals fermented by sourdough cultures.

Objective

The planned beverage will be in the sector of wellness -drinks . These wellness drinks are a continuous growing segment on European market and correspond the wish of the European customer to convenience in taste in combination with conscious nutrition. Different to the existing products our product will combine the old tradition of sourdough fermentation with new ingredients - the Pseudocereals. Pseudocereals are crop similar cereals, which do not belong to the family of crops. Pseudocereals are spread over the whole world. Due to their physiology of nutrition they contribute to a more healthy nutrition in Europe and they offer a possibility for a prevention of a one-sided nutrition out of wheat , rice and maze . A great goal will be to make the fermentation process possible . By fermentation the ingredients of the pseudocereals are modified in a positive way. The projected wellness drink therefore will contribute to a nutrition improvement of the european population and also a decrease of illness caused by false nutrition.
