Research and identification of a commercially feasible carob pulp byproduct with nutritious properties in human diet and health

Objective

Carob fruit pulp represents 90% of the dew. Have the whole fruit and so far had little market value, being used as animal feed. However, carob pulp is rich in extractable sugars, fibre and other compounds (polyphones and pinto) that exhibit nutritious properties beneficial to human diet and health and used in food industry . The aim of the project is to develop by-products that can economically meet market needs and contribute to improve citizen's well being. The project will also contribute to increase carob fruit producer's low-income yield from crops and allow industries to develop new technologies and enter new more profitable markets. The project consists of laboratory industrial simulation of high and low temperature water extraction of carob pulp with enzymatic treatments so as to identify by-products that may be used as ingredients in human functional foods and drinks. Once the right application is found, a pilot-processing unit will be considered to be implemented by the consortium.
