Tools for the development of convenience food specially adapted to the sensory perception of eldery people

Objective

The major aim of this R&D project is to increase the quality of life of inhabitants of nursery homes by offering foods specially designed for the sensorial needs of the elderly. It is expected that the improvement in the nutritional status and "fun" will also improve the health status of the patients of the nursery home and will reduce the costs for healthcare and medication. However, without access to a detailed knowledge of the differences in sensing of different products by elderly people, product designers are not able to create the specially formulated foods that could prevent, or even reverse nutritional deficiencies. The project aims at developing a tool for the product development in the food industry witch will facilitate product design with respect to the special physiological reactions of elderly people to sensory perceptions. The (software) tool will be based on sensory product profiles obtained from consumer and expert panels with ages of <> and 70 years.
