Dissemination and safety evaluation of wine yeast and genetically modified strains

Objective

Knowledge of the risks connected to the use of genetically modified wine yeast in the industry will be provide by studying the survival, dynamics and ability to speculate of yeasts during winemaking process and the consequences of gene modifications on genome expression and metabolite production.
