Integrated quality assurance of chilled food fish at sea

Objetivo

The aim of the project is to significantly improve the quality of fresh fish landed by Community vessels and to increase the proportion of the fish caught which is used for food purposes.
Research has been carried out to improve the quality of fresh fish landed by community vessels and to increase the proportion of the fish caught which is used for food purposes. This is achieved by specifying and developing safe, efficient, mechanized onboard handling systems.

A general flow diagram on an integrated quality system (IQAS) which can be connected to an electronic information system has been set up for white fish handling. A white fish gutting machine has been tested and is functioning. Also, prototype machines have been developed and tested at sea for transferring 'round' fish from the rotating gutting machine to an overhead chain conveyor and for lifting the fish off the hooks. A bleeding and washing method for fish has also been investigated. Weight grading at sea has been tested using an automatic marine weight scale and a conveyor belt with deflectors but problems still exist.

Weighing by wave compensated weighing cells of individual fish on a test rolling chain conveyor needs further research to improve accuracy. Computer vision for volume estimation on plaice has an error of about 5% using contour analysis. Computer vision for mass estimation of whiting and plaice based on estimates of length and area is not recommended and batch weighing of flat fish based on volume estimation looks promising.

A comparative study of spoilage rates of cod, haddock, whiting and plaice compare as follows: haddock better than plaice which is better than cod which is better than whiting. Finally, existing fishing computer programmes and hardware have been evaluated for the possibility of being used for the IQAS data acquisition job.
The aims will be achieved by specifying and developing safe, efficient, mechanised, onboard handling systems which will enable the catch to be sorted, characterized for length and weight, prepared quickly and correctly for rapid chilling and stowage in appropriate, labelled containers at 0 C until sold. A monitoring, measuring, container labelling and data storage system will be developed to specify the quality and potential yield of the fish to the buyer at the sale by reference to the actual time and temperature history of the fish prior to the sale and to the measurements of length and weight.

The project includes research on a number of distinct but integrated elements which, in brief, are as follows:
inventing and developing new equipment and systems for mechanically gutting, bleading, washing, icing and transferring white fish on fishing boats;
inventing and developing new equipment and systems for mechanically sorting and grading white fish on fishing boats at speeds and with errors which are commercially acceptable;
and obtaining data on possible new ways of improving chilled stowage of white fish on fishing boats.
