Making cheese without traditional milk sources

The dairy and cheese industry, like many other segments of the food industry, has come under scrutiny due to its environmental impact and ethical concerns related to animal welfare. For instance, dairy production contributes significantly to greenhouse gas emissions. It also requires substantial water resources. Nutropy, a visionary French startup, will address the ecological and ethical challenges posed by conventional dairy production. The EU-funded 22-WTE-NTP project combines Nutropy’s expertise with pulses to craft a hybrid line of animal-free cheese alternatives. By merging bioidentical milk components with nutritious pulses, this initiative strives to offer a delectable, sustainable, and morally conscious solution that could reshape the future of dairy consumption.

Objective

Nutropy is a French startup that develops the next generation of dairy and cheese alternatives. We produce bioidentical milk ingredients (proteins and fatty acids) to develop premium cheese alternatives that taste as good as conventional cheese but are more sustainable, healthier and better for the animals. This project is dedicated to the development of a new line of hybrid animal-free cheese alternatives containing pulses.
