Using biotechnology to create the next generation of sustainable foods from the roots of mushrooms

Alternative meats from mushroom roots

Ethical and health motivations and the need to reduce the environmental impact of meat production are driving the development of meat alternatives. The EIC-funded Mushlabs project supports the work of biotech company Mushlabs that has developed a proprietary fermentation technology to produce meat replacement from mushroom roots called mycelium. The biological process technology creates mushroom biomass rich in protein, dietary fibre and micronutrients with a savoury flavour from pieces of mycelium cultivated in a controlled and optimal environment. The mushroom’s mycelial cells ferment the side streams and multiply ferments in large bioreactors. The technology allows the creation of delicious, healthy and sustainable foods that replace meat with few ingredients and limited food processing.

Objective

Mushlabs is a biotech company that produces meat replacement from mushroom roots called mycelium. We have developed our proprietary fermentation technology to create mushroom biomass: a meat replacement ingredient revolutionizing plant-based alternative proteins. Our mission is to change the way people eat by producing tastier, healthier and more sustainable foods. We take pieces of (mycelium) and cultivate them in a controlled and optimal environment. These serve as the “seed” for the mushroom biomass we harvest. We feed the mycelium with side streams of agro-and food industries. In large bioreactors, the mushroom mycelial cells ferment the side streams and multiply. This biological process accumulates biomass rich in protein, dietary fiber and micronutrients with a savoury flavour, which serves as the main raw ingredient for all of our products. With very few ingredients and little food processing we create delicious, healthy and sustainable everyday foods that replaces meat.
