ON-LINE PRODUCTION CONTROL IN THE FOOD INDUSTRY USING FLUORESCENCE SPECTROSCOPY

Objetivo

The aim of the OPUS project is to transfer an innovative R&D result regarding fluorescence measurement technique for the pharmaceutical industry to traditional industries like breweries, dairies, sugar factories.
The traditional method for on-line analysis in the food industry has for several decades been the use of near infrared spectroscopy (NIR) in combination with chemometrics - the NIR technology is well known to be able to measure components in the range of a few % on the basis of molecular bond vibrations between C-N, O-H etc.
The fluorescence technique (FT) applied in this project is capable of detecting specific chromophores in the samples and not only the abundant C-N and O-H compounds. Such chromophores could be enzymes (milk/cheese), bitter compounds (beer), humus (water) etc. The FT technique is more specific and more sensitive than normal NIR techniques allowing measurement in the ppm range (approx. 1000 times more sensitive than NIR). In this connection it should be mentioned that many different compounds can be measured "on-line" at the same time, thus giving a detailed "finger print" of products and processes, which can be used to control wanted or unwanted compounds (toxic compounds), origin of products (wine, olive oil, etc.). The technique can have an immense positive influence on quality and safety of food products and drinking water, as the composition of products can be analysed not only in the finished product, but also in the production process.
It is the aim of the present partner group to adapt the above mentioned instrumentation for the use in other industries and actively support the technology transfer to selected major European food industries like breweries, dairies, sugar manufacturers and the environmental industry, who all have a clear need for better on-line control of their production.
The partnership comprises highly specialised high-tech SMEs, universities and large end-user companies belonging to the following sectors: Breweries, dairies, sugar factories and the environmental industry. As the food industry is for good reasons a conservative industry (product liability!), it is important that the technology is adapted, introduced and assessed by major players in the food industry. The participation of these major European companies is thus of crucial importance since it will ensure the best possible testing and validation of the systems under real conditions.
