Objective
The proposed DEMYBE project (filter aid-fine particles of the size of 50 μm average) has been conceived upon the needs of the reduction of mycotoxins, such as ochratoxin A (OTA), in everyday beverages (particularly beer and wine) and at the same time to substitute the Kieselghur filter aid. The aims of the proposed DEMYBE project are: to substitute the currently used carcinogenic Kieselghur filter system (currently used in 95 % of brewery worldwide) in regards to health and environmental issues that cause during the application/disposal of the filter aid in the brewery/vinification process and the removal of 80 % of OTA, from the end products. The new product will be made from natural vegetable fibres.
