Application of directive 93/43 in corn-flour-bread industries: training plan for quality approaches in companies

Objective

OBJECTIVES
The aim of the project is to develop a training programme for trainers for bread-making companies. This training programme will enable them to acquire the skills necessary for adapting to new quality and hygiene requirements in compliance with Directive 93/43 prescribing the standards which must be met in this area. A new middle management grade, that of quality trainer, will thus appear in the SMEs in the bakery industry.

ACTIVITIES
The transnational work will be based on meetings between partners, video conferences and the exchange of documents, with the aim of developing a co-ordinated methodology for the purpose of producing a set of training specifications. A "quality kit" will be developed, consisting of a training system which officially sets out the roles and tasks of the middle management grade. Once the training programme for trainers has been developed, it will be tested in two SMEs in the bakery industry. The training programme will also be produced on electronic media.

PRODUCTS
The trainer training method, which will be suitable for use in all SMEs in Europe, will consist of an individual manual for middle management, a set of specifications for the training and motivation of operators and a "quality kit" including an adaptable, upgradable quality system plan (for initial training in farm produce if necessary), and a computerised version of this plan.
