Objective
Occupations in the bakery/pastry-making trade are undergoing considerable change. Firstly, profound technological change is forcing professionals to modernise and sometimes automate their equipment in order to reduce costs and vary production. Secondly, commercial change is altering and diversifying channels of distribution (bakers and pastry-makers of all types must adapt their products to meet new customer demands). Finally, there has been a shift in know-how, in that while low-skilled occupations are disappearing in all wheat and flour-processing operations, new skills are becoming indispensable (i.e. production automation, administration, computer skills, sales and management).
For these reasons, the project partners have set themselves two principal objectives:
- to define low-skilled occupations in the industrial sector and facilitate their development by creating reference job-descriptions to make it possible to gauge the gap between current know-how levels and those required in the future; this will then lead to the setting up of appropriate training programmes;
- in view of the new occupations emerging in the commercial sector which will offer new potential for employment (baking-oven managers, baking assistants, sales staff, etc.), the partners will analyse these occupations on a job-by-job basis and describe these new professional profiles in precise terms in order to set up training programmes in which multi-media technology will play an important role.
Impact
Adaptation of bakery/pastry-making trades to meet the challenges confronting the sector in terms of changes in technology, commercial practices and know-how. Identifying new needs for skills, specifying new job profiles and setting up appropriate training programmes.
