THE EFFICIENT UTILISATION OF CASEIN/HYDROCOLLOID COMPLEX SYSTEMS AS FUNCTIONAL INGREDIENTS WITH PARTICULAR REFERENCE TO REDUCED-FAT FOODS

Objective



The objective of this project is to study and define new systems composing carns and various natural hydrocolloids, with the purpose of providing new approaches for production of reduced-part foods and beverages. A number of systems will be developed, including model systems, and assessed using established procedures well established in the participating laboratories. Successful combination will be trialed in foods.
