Highly flexible and low cost production cell adapted to craft pastry-makers'needs

Objective



The industrial baking sector is dramatically improving quality and reducing prices. Some moves have to be made by the sector either finding some ways of cooperation or subcontracting a portion of their products to a more specialized small industry with some characteristics on quality and flexibility that it is not available yet at an industrial level. This project intends to design a first pilot cell that will permit to produce a family of products, common to a large group of pastry cooks all over Europe, with the quality of craft products and small batch size.
Based on this development, a new company will be created with a production capacity 80 times the volume of a single pastry maker. Proposers and other pastries will have the possibility of subcontracting semi-elaborated products. Overall cost will be reduced 20% for each artisan workshop. Furthermore, participants will eliminate the most time consuming and repetitive tasks with the consequent improvement of working conditions . Exploitation will be warrantied because a reduced plant will be built once the project is completed and furthermore, and manufacturer of equipment will develop a machinery with a wide market perspective.
