Development of a bacteriophage to protect unpasteurised cheese against e. coli 0157:h7

Objective

Cheese made from unpasteurised (UP) milk is considered by many consumers to have a superior taste tothat made from pasteurised milk. Although unpasteurised milk cheese has an excellent safety record the emergence of a highly virulent strain of E. Coil (0157:H7) in the last few years poses a riskto both manufacturers and Consumers of these products. It is proposed to isolate a specific bacteriophage (from cheese), which will eliminate this pathogen frrom UP cheese. This exploratory award will identify research organisation(s) which will undertake this work, establish feasibility through desk studies, plan the research proposal, assess market potential for the innovation and confirm its novelty. The product will benefit consumer by ensuring the safety of UP cheese from this pathogen. It will remove economic risks from traditional UP cheese makers and will benefit the proposes who will hold the intellectual property of a valuable innovation.
