Objective
Whey production from dairies is an important source of pollution that affects directly to European countries. Around 4.400 European enterprises widely disseminated produce lactic whey as results of cheese elaboration, which is dumped into rivers causing huge environmental damages. The components of lactic whey are mainly lactose and albumins (loco and serum albumin) that in natural conditions have no profitable utility The development of a process for whey treatment that permits obtaining powdered proteins without lactose will promote use of such technology on the processing of lactic whey. The implementation of the result obtained during this project will affect directly to the environment impact, decreasing the dumping into rivers. Moreover, the improvement of the value of the obtained product will promote important benefits for transformers companies that will affect directly to the specialised employment.
