Integrated quality assurance of chilled food fish at sea Phase II.

Ziel

The aim of the project is to significantly improve the quality of fresh fish (white fish and flat fish) landed by Community vessels and to increase the proportion of the fish caught which is used for food purposes, as well as to improve the onboard working conditions.
An integrated quality assurance system (IQAS) has been set up to improve the quality of fresh fish (white fish and flat fish) by specifying and developing safe, efficient, mechanised, on board handling systems which will enable the catch to be sorted, characterised for length and weight, prepared quickly and correctly for rapid chilling and stowage in appropriate, labelled containers at 0 C until sold. A monitoring, measuring, container labelling and data storage system is being developed to specify the quality and potential yield of the fish to the buyer at the sale by reference to the actual time and temperature history of the fish prior to the sale and to the measurements of length and weight.

In the present situation with small quotas on cod fish species, low catch rate and mixed catches, it will be most suitable for white fish trawlers to make a IQAS catch handling system based on manual gutting of all species. Size grading will be made manually and supported by automatic grading using line scan or individual weighing. Size grading can also be made more simple by using appropriate length rules (one set rules for each species). All working positions or platforms have to be made according to ergonomic principles for increasing handling rate and quality of the work done. Temperature and time are controlled and monitored and chilling is based on bar coding of the individual boxes. On beam trawlers catching mainly plaice, agreements have been made with a beam trawler and a stern beamtrawler for IQAS demonstration trials.
The aims will be achieved by specifying and developing safe, efficient, mechanised, onboard handling systems which will enable the catch to be sorted, characterized for length and weight, prepared quickly and correctly for rapid chilling and stowage in appropriate, labelled containers at 0 degrees until sold. A monitoring, measuring, container labelling and data storage system will be developed to specify the quality and potential yield of the fish to the buyer at the sale by reference to the actual time and temperature history of the fish prior to the sale and to the measurements of length and weight. The research on flat fish will be made by CIVO and RIVO and the work on white fish will be made by FF.

The research work will be divided into 3 phases: phases 1 and 2 to further experiment with and construct sea worthy prototypes; and phase 3 to develop a complementary integrated quality fish handling line.
